Not sure about that, but its interesting coming from a trainer

Alot people do crunches totally wrong - like in the commercials for training equipment(when they show peoples crunches without the gear). The abdomen needs to be tight throughout, and upper body never higher than 45 degrees above ground, as the resistance will decrease above this level. The upper body should be as straight as possible, and back muscles should never be the puller.
I think you could do much more than 20, but going above 100 then I think you are doing something wrong. Having said that - doing 20 and just increasing the resistance each time, could be a good way to go about it, because at some point - people(including me) just want to have a high number to feel that they progress, but without equipment, its their is a limit of resistance you can reach. Maybe he just feels that it's healthier to do this, and just do it more times a day. I think I should do this, when maximizing my resistance.
At least this is the ways I was taught, when I trained Shotokan.
